Pistachios are the most expensive nut we work with, and this bar is 64% pistachio. That single fact explains the price and, more importantly, the taste — there is no filler here doing the volume work.

Cooked sugar holds whole pistachios in place while leaving them visible through the wrapper, which matters more than it sounds. The green is the selling point. On a shelf of brown and gold bars, this one gets picked up first for reasons that have nothing to do with flavour.

Then the flavour justifies it. Pistachio is faintly savoury and slightly sweet at once — less sugary than almond, more interesting than peanut — and against caramel it produces something closer to Middle Eastern baklava than to a Western candy bar.
