This is that recipe: 66% toasted sesame seeds in cooked sugar, rolled thin so it shatters rather than bends. Toasting is what makes it — raw sesame is bland and slightly bitter, while toasted sesame turns deeply nutty and almost savoury.

It is the only bar in the range made without nuts in the recipe, which makes it the option for a nut-free household. It is still produced on shared equipment, so the wrapper carries a "may contain tree nuts" warning — read it before serving anyone with a serious allergy.
