Almonds and cooked sugar is one of the oldest confections there is — Spanish turrón, Italian croccante, Middle Eastern nougat, all variations on the same two-ingredient idea going back the better part of a millennium.

This is that idea with nothing added. Almonds make up 66% of the bar; the rest is sugar and glucose syrup cooked to a hard, glassy caramel. Three ingredients, and that is the complete list — no palm oil, no binders, no flavourings, no preservatives.

The almonds are left whole rather than chopped, which is what gives the bar its snap: you break through caramel and then hit a solid nut. It is a slower, more deliberate thing to eat than a chocolate bar.

Nutritionally it is the best-balanced bar we sell — 7 g of protein and 3 g of fibre in 40 g, with 15 g of fat that is almost entirely unsaturated (just 1 g saturated). Also 72 mg of calcium and 191 mg of potassium per bar.
