Kunafa & Pistachio — 90 g

The signature size, and the one most people picture when they say "Dubai chocolate". A milk chocolate shell, a filling of 15% real pistachios, and toasted kunafa running through it — the combination invented in Dubai in 2021 and copied everywhere since.

What separates a good version from a bad one is entirely textural. The pistachio filling has to be rich without being oily, and the kadayif has to stay audibly crisp inside a moist filling for the whole shelf life of the bar. Get that second part wrong and you have an expensive pistachio bar with sand in it.

The flavour is less sweet than the shell suggests: pistachio brings a faintly savoury, almost buttery note, and the toasted pastry adds a nuttiness of its own. It is closer to a dessert than to a candy bar.
