Speculoos — the spiced caramelised biscuit that became cookie butter — started life as a Belgian and Dutch treat baked for St Nicholas in early December. Somewhere between the biscuit tin and the coffee saucer it turned into a global spread, and then into a flavour in its own right.

This bar takes that profile seriously. Caramelised crunchy biscuit is blended straight into the filling along with caramelised sugar and a genuine hit of cinnamon — that warm spice is what separates real speculoos from generic "biscuit flavour", and it is why this tastes homemade rather than manufactured.

The biscuit pieces stay crunchy through the filling, and kunafa underneath adds a second, finer crunch. Two different textures doing two different jobs.
